Mini muffin with cape gooseberries Vegan

Ingredients

2 cups of cape gooseberries

2 cups of oats

2 cups of homemade almond milk

8 seedless dates

1 tsp of cinnamon

a few drops of vanilla extract

Preparation

  1. Add all the ingredients to a blender and mix until combined (the batter can still be a bit chunky if you prefer it that way)

  2. Pour the mixture into the cupcake molds you have.

  3. Bake at 350 F for 25 minutes or until a toothpick inserted comes out clean. Let cool completely to set or if you want to eat them warm, you can use a spoon. Enjoy!!
