Recipe: Rustic Mountain Soup

Rustic Mountain Soup Recipe

Serves: 10 people

  • 1 onion small, chopped
  • 5 garlic cloves , minced
  • 3 potatoes clean and diced medium
  • 2 carrots medium, peeled and cut into ¼-inch rounds
  • 2 sweet corn cut into pieces
  • 2 leeks , chopped
  • 1 broccoli in florets
  • 1 bag of spinach
  • or 4 cups of any other vegetables you want to add
  • 1 chili pepper small, chopped
  • 2 tomatoes , chopped
  • 1 tablespoon of olive oil
  • 1 whole chicken , broken into pieces (optional)
  • 4 bay leaves
  • 1 bunches of cilantro chopped (optional)
  • 1 bag of ridges or other type of short pasta
  • 1 teaspoon of turmeric
  • 10 cups of water
  • Salt and pepper to taste
  • Slices of avocado to decorate at the end
  • lemon to taste


  1. In a small pot, add the olive oil and fry the garlic and onion for 5min.
  2. Add the tomato and chili pepper and fry for 5min.
  3. Blend the sauce in a blender.
  4. In a large pot, add the sofrito and the water.
  5. Add vegetables little by little to the broth, depending on the cooking times of each one. Add chicken (optional).
  6. Finally, add the ridges or pasta to the broth and cook for 10-15min or as indicated on the package.
  7. Add spices, bay leaves, salt and pepper while cooking everything together.
  8. Serve and add cilantro, avocado, and lemon to taste.
