Veggie Burger Recipe

Serves: 8 burgers

Ingredients:

  • 1/2 cup bread crumbs (panko works best)
  • 1 tablespoon tomato paste
  • 3/4 cup quinoa, cooked

      Preparation

      1. Heat oven to 400 degrees F
      2. Line two flat cans with aluminum foil.
      3. Mix the mushrooms, carrot, broccoli and onion with the coconut oil, garlic, paprika, chili, salt and pepper. Blend or put in a food processor and pulse 10-20 times.
      4. Spread the mixture in one of the tins with a spatula until it is a thin layer. Roast the mixture in the oven for 15min. Mix the vegetables and spread them again in a thin layer. Roast for 15 more minutes.
      5. Meanwhile, strain the beans and spread them in the second can until it is a thin layer. Roast for 15 minutes or until the beans begin to break down.
      6. While the vegetables and beans are roasting, combine the walnuts, spinach, chives, cilantro, and parsley in a blender or food processor.
      7. Add the beans to the mixture and pulse. Add roasted vegetables, panko, tomato paste and eggs. Pulse until everything is combined. You want to get a good texture so you should not blend the mixture too much.
      8. Transfer the mixture to a bowl and incorporate the quinoa with a spatula.
      9. Divide among 8 equal portions and make pancakes. Heat 1 tablespoon of coconut oil in a pan and fry the pancakes for 4-6min per side or until golden.
      10. Serve with hamburger bun, arugula, sliced ​​tomato, avocado and goat cheese or to taste.
