Recipe: Grated Beetroot and Carrot Salad
Beetroot and Grated Carrot Salad Recipe

Ingredients:
- 2 tablespoons orange juice
- 2 teaspoons lemon juice
- 2 teaspoons of olive oil
- 1/2 teaspoon minced ginger
- 1/4 teaspoon salt
- 1 cup peeled and grated carrot
- 1 cup peeled and grated beetroot
- 2 tablespoons fresh mint
Preparation
- Mix the first 5 ingredients.
- Add half of the dressing to the carrot and the other half to the beetroot. Stir.
- Serve in a bowl with the chopped mint on top.
