Recipe: Vegan Mushroom Soup

Vegan Mushroom Soup Recipe

Serves: 4 servings

  1. In a pot, add the coconut oil and fry onion, garlic, oregano and basil for 2-3min.
  2. Add the mushrooms and tamari. Stir over medium high heat and cover the pot for 10min. This will cause the mushrooms to shed their water.
  3. After 10 minutes, uncover the pot and cook for another 10 minutes so that the water released by the mushrooms burns a little.
  4. Add the coconut milk, stir and cook for 10 minutes so that the flavors blend well.
  5. Add salt and pepper to taste and serve hot.
  6. Serve and add cilantro, avocado, and lemon to taste.
