Vegetable Soup Recipe

Ingredients:

      Preparation

      1. In a pot, fry the red onion, carrot and celery with olive oil. Add garlic and zucchini.
      2. Add cilantro, oregano sprigs, celery leaves, salt, and pepper.
      3. Add the 3 cups of water and boil for 10 minutes.
      4. Add the chickpeas and spinach. Boil for 3 more minutes.
      5. Scoop out the celery leaves and oregano sprigs.
      6. Enjoy!
