Potato Soup with Leek Recipe

  • 1 onion , chopped
  • 4 leeks , sliced
  • 3 teeth  garlic , minced
  • 2 lb potato , diced
  • 1oz oregano cool
  • 1oz fresh thyme
  • 7 cups of water or chicken broth
  • 3 tablespoon unsalted butter
  • 2 tablespoons of white wine
  • 2 tablespoons creamy goat cheese
  • Salt and pepper to taste
  • Chives (for garnish)


      1. In a pot, heat the unsalted butter and fry the onion, leek and garlic.
      2. Add the potato to the pot, and fry with salt and pepper for a few minutes.
      3. Add the teaspoons of white wine and let the liquid reduce a little at medium heat.
      4. Add the 7 cups of water or chicken broth with the oregano and fresh thyme. Raise the temperature so that it boils.
      5. Reduce the temperature and let it boil for 15 min or until the potato is cooked.
      6. Scoop out the oregano and thyme. Blend to desired consistency.
      7. Add salt and pepper to taste, goat cheese and chives for garnish.
