Potato Soup with Leek Recipe

Ingredients:
- 1 onion , chopped
- 4 leeks , sliced
- 3 teeth garlic , minced
- 2 lb potato , diced
- 1oz oregano cool
- 1oz fresh thyme
- 7 cups of water or chicken broth
- 3 tablespoon unsalted butter
- 2 tablespoons of white wine
- 2 tablespoons creamy goat cheese
- Salt and pepper to taste
- Chives (for garnish)
Preparation
- In a pot, heat the unsalted butter and fry the onion, leek and garlic.
- Add the potato to the pot, and fry with salt and pepper for a few minutes.
- Add the teaspoons of white wine and let the liquid reduce a little at medium heat.
- Add the 7 cups of water or chicken broth with the oregano and fresh thyme. Raise the temperature so that it boils.
- Reduce the temperature and let it boil for 15 min or until the potato is cooked.
- Scoop out the oregano and thyme. Blend to desired consistency.
- Add salt and pepper to taste, goat cheese and chives for garnish.
