Recipe: Salty Moringa and Amaranth Cookies

Moringa & Amaranth Salty Cookies Recipe

Serves: 48 cookies


  • 1 cup of amaranth flour
  • 3 tablespoons olive oil
  • 1/4 cup of water
  • ½ teaspoon baking powder
  • ½ teaspoon garlic powder
  • 1 teaspoon thyme
  • 1 tablespoon fresh rosemary , chopped
  • ½ teaspoon salt
  • 1 tablespoon moringa


    1. Preheat oven to 350°F.
    2. Place all the ingredients in a bowl and mix well with your hands. The dough should be flexible and fluffy – don't try to add more water to it.
    3. Put the ball of dough on waxed paper and for a short time, knead gently. If the dough is sticky, add a little flour and knead until smooth.
    4. Flatten the dough into a rectangle and place another piece of waxed paper on top.
    5. With a rolling pin, roll the dough to a thickness of 1/5 inch (5 mm). Remove the top waxed paper, and with a sharp, oiled knife, score a grid. Each square should measure about 1 ½ inches.
    6. Place the dough and parchment paper on a baking sheet. Gently prick each square with a fork to prevent puffing while baking.
    7. Bake for 25 minutes, or until the edges are golden. They will crisp up as they cool.
