Recipe: Salty Moringa and Amaranth Cookies
Moringa & Amaranth Salty Cookies Recipe
Serves: 48 cookies
Ingredients:
- 1 cup of amaranth flour
- 3 tablespoons olive oil
- 1/4 cup of water
- ½ teaspoon baking powder
- ½ teaspoon garlic powder
- 1 teaspoon thyme
- 1 tablespoon fresh rosemary , chopped
- ½ teaspoon salt
- 1 tablespoon moringa
Preparation
- Preheat oven to 350°F.
- Place all the ingredients in a bowl and mix well with your hands. The dough should be flexible and fluffy – don't try to add more water to it.
- Put the ball of dough on waxed paper and for a short time, knead gently. If the dough is sticky, add a little flour and knead until smooth.
- Flatten the dough into a rectangle and place another piece of waxed paper on top.
- With a rolling pin, roll the dough to a thickness of 1/5 inch (5 mm). Remove the top waxed paper, and with a sharp, oiled knife, score a grid. Each square should measure about 1 ½ inches.
- Place the dough and parchment paper on a baking sheet. Gently prick each square with a fork to prevent puffing while baking.
- Bake for 25 minutes, or until the edges are golden. They will crisp up as they cool.
