Chicken with Plums & Olives Recipe

Serves: 6 servings



    1. In a bowl, combine the garlic, plums, olives, capers, olive oil, vinegar, bay leaves, oregano, salt, and pepper. Mix well. Spread the mixture in the bottom of a pyrex. Add the chicken pieces and mix until they are covered with the mixture. Cover and refrigerate overnight.
    2. Preheat oven to 350 degrees F. Remove pyrex from refrigerator. Pour panela over the chicken and pour the white wine around the chicken.
    3. Bake in the preheated oven for 1 hour, basting the chicken several times as it bakes. Serve on a plate with the juice on top and decorate with the parsley.
