Vegan Mac & Cheese Recipe

  • 1 guicoy seasoning
  • 1 cup coconut milk
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 3 teaspoons apple cider vinegar
  • 2 teaspoons mustard (mustard prepared with grains)
  • 1/3 cup nutritional yeast
  • 1 teaspoon turmeric powder
  • 2.5 teaspoon salt
  • ¼ teaspoon cobanero chile powder


  1. Preheat oven to 400 F/200 C
  2. Cut the güicoy in half, and place it on a tray upside down
  3. Add ½ cup of water to the tray, and put it in the oven
  4. Bake for 30-40 minutes, or until you can stick a fork in the güicoy without effort.
  5. Remove from the oven, let cool for a moment and then, with the help of a spoon, remove all the meat from the güicoy and put it in a blender
  6. Add all the ingredients to the blender and blend until everything is incorporated and without lumps.
  7. Add salt to taste and mix with your favorite pasta
