Grilled Vegetable Skewers Recipe

Ingredients for the skewers:

Ingredients for the sauce:

  • 1 cup of soy sauce
  • 1 cup of brown sugar
  • 6 tablespoons lemon juice
  • 6 tablespoons orange juice (fresh)
  • 3 tablespoons sweet chili sauce
  • 3 teaspoons of sriracha
  • 1 head of garlic
  • 1 tablespoon curry powder

Preparation

  1. In a bowl, mix all the sauce ingredients.
  2. Using separate bowls for each vegetable, cover the vegetables in the sauce and let sit for at least 20 minutes.
  3. On a wooden or metal skewer, add the eggplant, onion, shitake and chili pepper until the skewer is covered.
  4. Grill the skewers, adding more sauce so they don't dry out.
