Grilled Vegetable Skewers Recipe

Ingredients for the skewers:
- 2 eggplants , sliced and cut into triangles
- 3 chili peppers , cut into squares
- 1lb of shiitake mushrooms , diced
- 1 white onion , cut into triangles
- 1 red onion , cut into triangles
Ingredients for the sauce:
- 1 cup of soy sauce
- 1 cup of brown sugar
- 6 tablespoons lemon juice
- 6 tablespoons orange juice (fresh)
- 3 tablespoons sweet chili sauce
- 3 teaspoons of sriracha
- 1 head of garlic
- 1 tablespoon curry powder
Preparation
- In a bowl, mix all the sauce ingredients.
- Using separate bowls for each vegetable, cover the vegetables in the sauce and let sit for at least 20 minutes.
- On a wooden or metal skewer, add the eggplant, onion, shitake and chili pepper until the skewer is covered.
- Grill the skewers, adding more sauce so they don't dry out.
